Murukku is a crunchy, spiral-shaped snack that is typically deep-fried to achieve its crispy texture. Garlic murukku gets its distinctive flavor from the addition of garlic paste or minced garlic cloves to the dough, giving it a delicious garlic aroma and taste.
Here's a basic recipe for making garlic murukku:

- 1 cup rice flour
- 2 tablespoons urad dal (black gram) flour
- 1 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 1 teaspoon red chili powder (adjust to taste)
- 4-5 cloves of garlic, finely minced or made into a paste
- Salt to taste
- Water, as needed
- Oil for deep frying
Start by roasting the urad dal (black gram) in a dry pan until it turns slightly golden and emits a nice aroma. Allow it to cool, then grind it into a fine powder. This is optional but adds a nice flavor and texture to the murukku.
In a mixing bowl, combine the rice flour, urad dal flour, cumin seeds, sesame seeds, red chili powder, minced garlic, and salt.
Gradually add water, little by little, and knead the mixture into a smooth, pliable dough. The dough should be firm, not too soft or too hard.
Heat oil in a deep frying pan over medium heat. You'll know the oil is ready when a small piece of dough dropped into the oil sizzles and rises to the surface.
While the oil is heating, prepare the murukku press. Use the star-shaped plate (mould) in the murukku press.
Take a portion of the dough and place it inside the murukku press.
Press the dough through the murukku press directly into the hot oil. You can make spiral shapes or any other design you prefer. Be careful not to overcrowd the pan; fry them in batches.
Fry the murukku until they turn golden brown and become crisp. This usually takes a few minutes.
Using a slotted spoon, remove the fried garlic murukku from the oil and place them on paper towels to drain excess oil.
Once they cool down, store them in an airtight container. Garlic murukku can be stored for a few weeks and makes for a delightful snack.
